The name Hot Leaf Juice comes from a scene in Avatar: The Last Airbender.
Although this is meant to be funny, and it certainly is, it is also true. Tea really is just leaves steeped in hot water. But this simplicity is precisely what makes tea so fascinating. Tea is nothing more than a leaf than has been processed and dried.
For example, compare Lapsang Souchong black tea and Silver Needle white tea. These teas come from the same exact plant. Yet, Lapsang Souchong black tea is so strong and smokey, with its trademark campfire aroma and taste. Meanwhile, Silver Needle white tea tastes incredibly light and floral.
The only difference is the processing. The white tea has simply been picked and then dried, while the black tea has been withered, and then rolled and oxidized before being dried. Although this may seem like a small difference, this process creates two entirely different tasting beverages.
